Well Van Bruggen bloggers, it's about time for a post from this VERY BUSY English Professor (quit laughing Becky!!!). I've talked about posting a recipe for awhile, so now it's time to get to it! Here goes:

ZESTY EGGS AND VEGGIES IN A WRAP (Alright, so maybe the recipe title does need some refining!)

Ingredients:
-1 onion (spanish or yellow)
-1/2 to 1 sweet pepper (I like red, but green or others can be substituted)
-Mushrooms (any type, but the white button variety works well)
-3 eggs
-1/2 cup shredded cheese (cheddar and/or pepperjack works best)
-salt & pepper to taste
- 2 or 3 large, soft tortilla shells
-Sweet & hot sauce - mix sweet and hot pepper sauces together (hot pepper sauce may be substituted by tobasco, worshshire, or other hot sauce) and add mayo to taste.
-Enough cooking oil (virgin olive oil works best) to sautee the veggies and then the eggs.

1. Cut-up and/or dice the onion, sweet pepper and mushrooms - sautee in a hot frying pan until done (crispy/tender is tastiest). [You can also add bacon, ham or other pieces of meat, as per your preference and availability)- set aside
2. Separately mix the 3 eggs and scramble them up.
3. Add the sauteed veggie mixture to the srambled eggs
4. Add the shredded cheese and salt/pepper mix and stir until blended.
5. Add the sweet & hot sauce to the blend - stir until thoroughly mixed.
6. Fold 1/3 to 1/2 the mixture into either 2 or 3 large tortilla shells - wrap up tightly and cut in half.
7. Enjoy! Makes 2 - 3 servings (note: for 1 person, use 1/2 the amount of ingredients [approximately!].
