Breakfast Burrito


I figure that since Wes shared a recipe made with left-overs that I could do the same. Dad and I call this Breakfast Burrito.


You will need Burrito Wraps or make your own which is very easy. Just flour, water and salt. You will need a frying pan, a hot element and a little oil (very lightly oil the surface of the pan or use a non-stick pan which is best).

Left-overs: We have used left over chicken, vegies or rice and bean mixtures. Just about anything in the frig will do. Warm your leftovers. Add additional spices such as garlic powder, salt and pepper and Thyme or Oregano to make a savory filling for the burrito.

Assemble your Burrito: Lay out your wrap, draw a line down the middle with mayonnaise, mustard or sweet sauce, then add your left-over filling. Don't use too much of the filling. Lay it out in a line down the center of the wrap - approximately 1.5 inches wide, the width of the wrap. Starting on one side, tightly roll the wrap around the filling, creating a log-shaped burrito. If you wish you can fold in the ends to prevent the filling from falling out before you begin to roll.

Now you should have your Breakfast Burrito completed and it's time to enjoy. Cut in half, pour yourself a cup of milk or hot milk coffee and add a cup of yogurt and now you have a complete breakfast.
