Breakfast post

Hi all

I am posting a slightly unconventional breakfast.  I have become a bit of an expert in using food that I have made for dinner for breakfast, just to point out this is not my favorite breakfast but this was what I ended up making for this week.

Breakfast Curried beans

One can of kidney beans
One can of navy beans
One can of Chickpeas
One onion chopped
One can of diced tomatoes
Garlic to taste
1 1/2 teaspoon of curry powder
1 teaspoon of cumin
1 teaspoon of cayenne pepper

First put a little oil in the bottom of a put and add the chopped up onions and garlic to brown

Once the onions and garlic are browned add all the beans and tomatoes and let simmer

Stir in Curry, Cumin and Cayenne pepper and salt to taste

After you eat your dinner with the appropriate grains to make a full protein for dinner place left overs in a container and put in fridge

The next morning wake up and try to figure out what you want to eat for breakfast and then realize that you are completely out of yogurt and granola so decide to improvise.  Take the curried beans from the container from the fridge and warm up in a pot over the stove.  Make yourself a grilled cheese sandwich and fry up a couple eggs.  Put everything together and enjoy a slightly unconventional breakfast and start a productive day.
